Cereals are basic human food since ancient times. Some, such as wheat, rye, spelt, barley, etc. have been has long been establishedin our diet.Â Others again, like amaranth, quinoa and kamut, are a novelty on our menus. In fact, they are the novelty in the diets of Europeans, while they have been consumed by the people of the world for thousands of years.
The millet grain was a bit forgotten in past years but has been used by our grandmothers for years and years in the past. Millet grain helps with the acidification of the body, which is aÂ common feature/problem of modern men and women. Buckwheat is also a form of a great whole food, which is also sold in a roasted version. The roasted version can shorten the cooking process and gives it a particularly interesting taste. Amongst other cereals in the healthy nutrition sphere, kamut has really established itself. This ancient grain has not been spoiled by genetic modification.
Did you know that the word ''kamut'' means a grain in a general meaning? The name was appointed by the ancient Egyptians but later, a biochemist Bob Quinn used the name Kamut for this certain type of grain. It's real name was Khorasan and is an ancient version of durum wheat.Â
Quinoa originates from South America and grows on the slopes of the Andes. The Incas called it "the mother of all cereals''. Due to its high nutritional value and the protein content it is particularly suitable for vegetarians, athletes or people with major physical effort. Cook it in a similar way as rice. It can be eaten as a side dish or a main dish with a variety of accessories. Amaranth originated from Mexico where it is called ''Aztec Gold''. It is extremely nutritious and easy to digest at the same time. Like quinoa, it can be prepared in many different ways, it is great in all kinds of soups.
